Ingredients

200 g – Firm tofu (pressed, crumbled by hand)

50 g – GrindHaus Hot Madras Mix

40 g – Onion (finely chopped)

40 g – Tomato (finely chopped)

20 g – Capsicum (finely diced)

5 g – Ginger (grated)

5 g – Garlic (grated)

15 g – Olive oil or cold-pressed groundnut oil

4 g – Rock salt (adjust to taste)

2 g – Turmeric powder

10 g – Fresh coriander leaves (chopped, garnish)
Directions
Heat oil in a pan, sauté onion till translucent.
Add ginger, garlic, tomato, and capsicum — cook till soft.
Stir in Hot Madras Mix and 2 tbsp water, simmer 2 minutes into a paste.
Add crumbled tofu, turmeric, and salt. Stir-fry on medium heat for 5–7 minutes till coated and lightly browned.
Garnish with coriander and serve hot with toast, roti, or quinoa.
